Orange Scones*
Preheat oven to 425 degrees *If you prefer Lemon Scones, just replace Orange ingredietns with Lemon ingredients
3 cup flour 1 Tbsp baking powder ½ tsp salt 1/3 cup sugar ½ cup butter (frozen & grated) 2 eggs ¼ cup milk ½ cup heavy whipping cream 1/8 cp fresh orange juice 2 tsp orange zest
Combine flour, baking powder, salt, and sugar. Cut the butter into tablespoon-sized pieces (tip-freeze butter & grate it) and using a pastry blender or a fork cut into dry ingredients.
In another bowl, mix eggs, milk, whipping cream, orange juice, and orange zest. Mix the dry ingredients into wet ingredients. Turn the dough out on a floured surface and knead to combine (tip: Do not overwork the dough)
Divide the dough into two - Shape each half into a circle about 1 inch thick. Cut each half into wedges & place on a parchment covered cookie sheet. (refrigerate dough until ready to bake for best results.)
Bake @ 425 for 12 to 15 minutes
Optional Glaze:
2 cup powdered sugar 1/8 cup fresh orange juice 2 Tbsp melted butter 1 tsp orange zest
Mix together glaze & spoon over tops of scones while warm
(SuperTip. I make double batches, and freeze individual unbaked scones. Later, I can pop one or two in oven and have fresh baked scones whenever I wish).
