éClair defined - An open pastry case containing a sweet or savory filling.

My Mom used to make a version of this recipe for special occasions, using Dream Whip and adding cocoa. Seems so much exciting to call it an éclair – and Sooo much easier with frozen whipped topping.

Great fun to make with the kids, can be refrigerated for 5 days and even freezes well. 

This version is great for young cooks who will enjoy both making it and eating it. Yummy – Enjoy!

3 cups milk 8 oz. container frozen whipped topping, thawed 5 oz. package instant vanilla pudding mix 1 package graham crackers 1 container prepared chocolate frosting

Stir milk, whipped topping and pudding mix together in bowl until well combined. Arrange single layer of graham crackers in bottom of 9x13 pan. Spread half the pudding mixure on crackers. Repeat for 2nd layer. Cover and refrigerate 30 minutes.

Frosting: Spread frosting over chilled cake, cover, chill at least 3 hours before serving.

If there is any left over you can refrigerate up to 5 days or freeze up to 4 months (I dare you to try keeping it 4 months – I always eat it well before then!)
