Valentine's Day is just around the corner, and what better way to celebrate than with a decadent and creamy classic French dessert? Easier than you might think to prepare, can be made ahead so you are fresh and relaxed, and sure to impress!

Ingredients (preheat oven to 325°F)

2 cups of whipping cream 1/2 cup of sugar (+ sugar for caramelized topping) 1 vanilla bean, split lengthwise (may substitute 2 teaspoon quality vanilla extract) 5 large egg yolks

Infusing Flavors

In a heavy medium saucepan, mix the whipping cream and sugar. With small sharp knife split and scrape seeds from the vanilla bean and add to saucepan. Stir over medium heat until sugar dissolves and the mixture barely begins to a simmer. Remove from heat, cover the pan, and let it cool slightly to infuse flavors.

Meanwhile….

Whisk the egg yolks in a medium bowl until well blended. Remove vanilla bean from warm cream mixture and gradually whisk in with eggs to blend.

Baking the Custard

Now prepare the ramekins for baking. Place five ramekins (number may vary depending on size of your ramekin)  in a baking pan. Pour custard into ramekins, up to about 2/3 of the way. Fill larger baking pan with hot water about 2/3 of the height of the ramekins. This water bath method creates a gentle and even heat distribution around the custard.

Carefully transfer the pans to preheated oven and bake at 325°F for approximately 30 minutes. You'll want the middle of the custard to jiggle just a little bit. Once baked, remove the ramekins from the water bath and allow them to cool. Once cooled, plastic wrap tops of ramekins and refrigerate for at least 3 hours to set (can be made up to couple days in advance).

Caramelizing the Sugar (also known as my excuse for buying a kitchen torch!)

The final, fun step is the signature caramelized sugar topping! To prepare for serving, sprinkle a thin layer (1 to 2 teaspoons) of sugar on top of each custard. To achieve that beautiful caramelized crust, you have a couple of options. The traditional method involves using a kitchen torch to melt and brown the sugar. You can also use the broiler in your oven. It may not be as fun as wielding a torch, but it will still get the job done! The sugar will bubble and set as it caramelizes, creating that satisfying crunch when you crack it with your spoon.

Serve and Enjoy

After caramelizing the sugar, refrigerate the Creme Brulee for an additional 5 to 10 minutes, but no longer than 30 minutes, to allow the sugar to harden. Once chilled, it's time to serve and enjoy this creamy delight.
