Sweet Potato Protein Brownies
Ingredients
- 1 large sweet potato (steamed)
- 60g (~2 scoops) chocolate protein powder
- 1 tsp stevia
- 4 tbsp water
- ¼ cup cacao powder
- ¼ tsp salt
- 1 tsp baking powder
- ¼ cup flaxseed meal
- ½ tsp baking soda
- ¼ cup zero-sugar chocolate chips (I like Lily's)
- 2 tbsp monkfruit sweetener
- ⅔ cup unsweetened soymilk or alternative
Steps
- Preheat your oven to 350°F.
- In a large bowl, mix your flaxseed meal and 4 tbsp water, allowing them to sit and thicken for 5 minutes.
- Mash your sweet potato into your large bowl until completely mushed.
- Add the rest of the ingredients and fully combine.
- Divide the entire batch by 8, portioning into a muffin or brownie mold (I like using silicone for easy removal).
- Bake your brownies for 30–35 minutes, then allow to cool before enjoying.
