Ingredients

  • 1 large sweet potato (steamed)
  • 60g (~2 scoops) chocolate protein powder
  • 1 tsp stevia
  • 4 tbsp water
  • ¼ cup cacao powder
  • ¼ tsp salt
  • 1 tsp baking powder
  • ¼ cup flaxseed meal
  • ½ tsp baking soda
  • ¼ cup zero-sugar chocolate chips (I like Lily's)
  • 2 tbsp monkfruit sweetener
  • ⅔ cup unsweetened soymilk or alternative

Steps

  1. Preheat your oven to 350°F.
  2. In a large bowl, mix your flaxseed meal and 4 tbsp water, allowing them to sit and thicken for 5 minutes.
  3. Mash your sweet potato into your large bowl until completely mushed.
  4. Add the rest of the ingredients and fully combine.
  5. Divide the entire batch by 8, portioning into a muffin or brownie mold (I like using silicone for easy removal).
  6. Bake your brownies for 30–35 minutes, then allow to cool before enjoying.
