Ingredients

  • 2 cups pumpkin purée
  • 2½ Tbsp arrowroot starch
  • ¾ cup full-fat canned coconut milk
  • ¼ cup coconut sugar
  • ¼ cup maple syrup
  • 1 Tbsp pumpkin pie spice

Steps

  1. Blend it all in a food processor until smooth, add to a prepared crust, and cook for 40–45 minutes or so until golden.
  2. Allow to cool, then refrigerate overnight and enjoy.
