These are the perfect pre-workout snack or post-dinner dessert. They are vegan, packed with whole-food ingredients, have added protein, and take only 10 minutes to make.

What You'll Need

  • 90g rolled oats
  • 90g oat flour
  • 15g unflavored pea protein (or other)
  • 40 ml pure maple syrup
  • 30g zero-sugar pancake syrup (or other sweetener — you can also just increase the maple syrup amount)
  • 80g almond butter (or other nut butter of choice)
  • 90 ml water
  • 200g berries (I used raspberries, but you can do any fruit / filling here)

Steps

  1. Mix ALL ingredients except your berries in a bowl until well combined.
  2. Heat your berries in a small saucepan on low-medium heat until a jam consistency is achieved (~3 minutes).
  3. Layer half of your oat mixture flat into a parchment-lined bread pan (I used a spatula).
  4. Add your berries on top of the bottom layer, then add the rest of your oat mixture either flat or crumbled.
  5. Freeze for 1 hour or until set, then enjoy.
